White tea is, without question, the aristocrat of the tea world: the least fussed-with, the most coveted, and harvested only once a year - typically in spring, when everything is behaving its best. For our loose leaf white teas we take only the youngest leaves and buds, plucked with great care and then gently sun-dried. The reward is a pale, Champagne-coloured cup with a freshness and delicacy that feels almost unfair on the other teas.
China’s White Peony is the best-known of the set, and for once the reputation is entirely deserved. Made from tender young buds and leaves, it carries a soft, natural sweetness with the lightest floral notes - honeysuckle, if you’re feeling poetic. Our White Peony, with its bright emerald leaves and buds, is a touch more full-bodied too, with a pleasing, melon-like sweetness.
And here’s the clever bit: each of our white teas can be re-infused up to three times, with every steep drawing out new, finer nuances from these quietly remarkable leaves.
